An expansion at Bird-in-Hand Bakery will not only double the size of the current building, but it will also add a 35-seat cafe and allow the business to begin producing its own artisan ice cream.

“The Bird-in-Hand Bakery & Creamery expansion is one more element in the continuing development and enhancement of the Village of Bird-in-Hand as a unique destination,” John E. Smucker II, CEO of The Bird-in-Hand Corp., said in a news release. “Much care has been taken in the design of the building. The new setting will feature welcoming windows, a demonstration area and open shopping space. Plus, its indoor and outside cafe seating and street level plaza dining will allow shoppers and diners to enjoy surrounding farmland and wave to passing Amish buggies.”

The $3 million expansion will also allow the bakery to offer its wholesale customers a wider line of specialty baked goods. Ground has been broken on the 21,000-square-foot building, which is slated for completion by late summer. The expansion will add 20 to 25 employees to the present 40-member staff.

Architects for the project are Bill Landis Architects and Cornerstone Design of Lancaster, with D&M Builders of Bird-in-Hand serving as construction manager. James D. Chudnovsky is general manager of the bakery.

The Bird-in-Hand Corp. was founded in Lancaster County in 1968 by the Smucker family and remains a Mennonite, family-owned company. It owns or manages six lodging properties: Amish Country Motel, Bird-in-Hand Family Inn and Bird-in-Hand Village Inn & Suites in Bird-in-Hand, Country Acres Campground in Gordonville, Mill Stream Country Inn in Ronks and Travelers Rest Motel in Intercourse.

In addition to the bakery, the food service division includes the Bird-in-Hand Family Restaurant & Smorgasbord and farmers market stands in Bird-in-Hand, Manheim and York. In 2011, the company opened the Bird-in-Hand Stage at the Family Restaurant.
